Great piece!! In Indonesia, we also have something similar called 'tapai/tape ketan', a fermented glutinous rice. Interestingly, although it contains alcohol, it’s still considered halal here. i wonder whether jiu niang is considered halal as well...

Is the water in the ingredients used for soaking? Or can you use tap water?
