this is a beautiful dish - one question - where does one use the ginger? I assume in the sauce because it's listed there in the ingredients, so I will put it in with the bean paste and cook it with the pork.
Zha jiang mian is one of my favourites! You can make a really good vegan one with eggplant

hi thanks for spotting this mistake! The ginger is added when frying the pork belly, I will adapt the recipe.
