I appreciate the nerdy deep dive :-) Will try this one with my wife. We both love the Lao Gan Ma, haha. We are in Korea though, so if we make it, this will probably be with Korean red chili flakes (slight fermented smoky taste).

Thank you, Patrick! I think gochugaru works as well, or mix it with another chili flakes to give it more complexity.
